WFMW Easy Summer Cooking

I am all about taking it easy in the kitchen. Especially in the summer. It’s just too hot to be cooking heavy difficult meals. But…every once in a while I get down to it and cook like the good Lord intended me to. Bumpkin style! Ya know….something that requires gravy. 🙂

I find “my peeps” hard to please at times. But these recipes are tried and true. My family will actually eat them AND enjoy it. So here goes..

Summer Salad

Baby garden blend lettuces
Strawberries (sliced thin)
Pecans (crumbled)
Feta Cheese (crumbled)
Poppy seed dressing ( I use Brianna’s from the grocery)

Mix….drizzle…..Enjoy! It’s so yummy!

Chicken Salad

2 large cans chicken ( I use Walmart brand)
Dried Cranberries (as many as you like)
Walnuts (chopped)
Mayo (as needed)
Dash salt & pepper

Mix…..eat on bread, croissants or crackers! People will rave about it!

Breakfast Burrito’s

1 lb. Mild pork sausage (fried and crumbled)
4-6 eggs scrambled (not dried out)
Cheese of choice (I use a fiesta blend mixture)
package of flour tortilla shells (I use the smaller size)

After draining the cooked sausage….mix 1/2 of it into the scrambled eggs and cheese while cooking. This makes them marry together well. {save the other 1/2 of sausage in baggie…for quicker burrito’s the next day!}
Heat your tortilla’s in the oven @ 350 for a minute. Add your egg/sausage/cheese and any salsa or other ingredients. Really enjoy.
These are great for rushed mornings…..they roll up and travel well out the door. Good for eating “on the way”. 🙂
